You can post whatever you want on most instances (unless it breaks Terms of Service of that instance), it doesn't have to be instance main subject related. You canhave multiple accounts if you feel like thats the way you want your toots to be organized, and followers too

If you want more up to date distros with kernels and graphics drives for video games I recommend PopOS! or Manjaro. PopOS is based on Ubuntu, Manjaro is based on Arch. Happy Linuxing

I don't know if you can turn your Mac into server but I guess you can install some Linux distro on it and then use it as server, still I recommend buying one of Rasberry Pis and then enter into selfhosting projects
