I switched wifi and now it works as intended, I guess it happens at random. Wireguard connection works fine but its DNS resolver misbehaves, since DNS resolver is actually local IP of my rasberry pi

By privacy you mean hiding your IP? Yes, VPN would solve that. If you also want to get rid of analytics and trackers you could configure your VPN to use some blocklists like PiHole for example or NextDNS (you need premium subscription afaik)

Nothing to be worried about, they could access your IP address anytime before. That permision is needed because UBO now blocks sneaky ads that appear through CNAME
