There is always that fear that devs don't run exact code they represent, this solution is selfhostable and if you are really paranoid you could run it yourself and verify it, I mean, that is the point of open source -> don't trust, verify?

Lot of legit tools are using Github, why is that I'm not sure. Github is GDPR compliant and I don't hate it as much as other MS projects. You could open request for support of .onion addresses why not

Although I wouldn't recommend hosting email servers, they seem like too much work. This seems affordable solution if you don't want to selfhost

If you are using online password it would be wise to backup your passwords/secrets to offline database that you can copy around. Offline password manager that I use is KeePassXC
