You can install additional software and other various setups and make them persistent in Tails afaik, its just that I like to keep as you said as low as possible attack surface and I think that is the point of OSes such are Tails and Whonix. There is always that convinience/security trade off, anyway I think Kodachi will have its audience and I have nothing against it, its still win for FOSS community imo

yep.
on on side tails have a reduced attack surface.
But on the other side you may need to install different packages and configure them in iptables with customized scripts at every startup.
kodachi looks more complete for my needs, but I will test it
