Now with IPv4 NAT is the only reason why such crappy and overcomplicated protocols for NAT piercing as STUN or UPnP even exist. So you not only need Jitsi for a video call, you also need a 24/7 STUN operator - like Google. And if you look at the ecosystem of P2P protocols they're spending enormous amount of resources solving this one problem of NAT piercing. Any many of them get this wrong, because it's non trivial.
