I'm a bit confused about why people are using alacritty, I get that it's a fast terminal? But does it mean that in some cases, people's terminals lag? Is that a thing, the terminal being slow to draw letters on the screen?

I don't know much about that sort of stuff.

@neauoire i mostly use it because i like that the configuration is very readable and it’s just yaml that i can commit to my dotfiles.(for some other terminal emulators i’ve tried that’s not been the case.) i have never been in a situation where it “performs better,” though.

I use it for the same reason.
Also it's pretty minimalist. I mean, in comparison with the alternatives.
The only one that is simpler is probably ST.
