Just got a bunch of SD cards, what Raspberry Pi foolishness do people recommend I get into?

I have the Pis already, just wanted to mess around with single-purpose distros or what have you

Yeah. So they do have an opt-out for the actual recordings but it still goes there. Its unclear exactly how the opt out works. Here's the privacy policy its not terribly long and you can decide for yourself but it turned me away just having to make an account combined with the data they collect. I had hoped it was all done locally.

You can actually set up mycroft to work locally with your own skills. The sync to their servers are so that you can say install _____ skill. I installed on one of my servers and have my own skill repository.
